Classic risotto with sautéed mushrooms and basil pesto
Risotto made the old-school way. Caramelize onions in olive oil, add the risotto and toast slightly, deglaze with white wine, and slowly add stock. Boom. Finally, the basil pesto and sautéed mushrooms are added.

I apparently like my food more bland. :) I used many different backpacking meals on my 2024 AT thru hike, this one is my all time favorite. I would add one packet of olive oil to the meal so bumping the calories up to close to 1000 which was awesome. One of the few packaged backpacking meals I would look forward to on the trail. Thanks Good-to-go.

Good flavor, too watery. Recommend less water and it took a long while to hydrate. I was at 12,000ft, so expected some extension of time, seemed excessive. if had not been in a coozy it would have got cold.

I bought this meal on the CT at a Leadville outfitter. I was so happy at first to find a meal that was free of gluten and dairy products but after tasting it on the trail I found that it was also free of all flavor. I've never eaten a dehydrated meal so bland and flavorless as this. That motivated me to donate another meal of the same brand to a Hiker box later. Sorry, the manufacturer probably has good intentions but please, for the love of God, put some spices in your meals!

I was hoping this would be amazing because it does sound amazing - unfortunately not the case. The Risotto was super bland, we ate it at the campfire and I am just glad this is not the only meal I brought to a backpacking trip. It needs so many more spices and quite a bit less water than instructed
